Vinification

The grapes used to craft this effervescent wine were handpicked from specially selected Pinot Noir and Chardonnay blocks in the Franschhoek valley. The juice was cold fermented and aged for 6 months before it was sealed in the bottle for the second fermentation process. Maturation on the lees for 5 years took place to develop richness.

Style

This bottle fermented blend in equal components of Pinot Noir and Chardonnay is aged “sur lie” for 5 years before disgorgement with zero dosage, resulting in a complex, rich leesy sparkling wine with a crisp palate. Notes of baked apples, biscotti, brioche and a hint of pears are supported by the delicate bubbles.
